Having just recently celebrated Valentine’s Day, I’m sure most of us saw some pretty cute posts about Galentine’s parties. I love to celebrate my besties too! So when I saw the Diet Coke came out with so many new flavors displayed in colorful tall cans, I immediately thought they would pair well with a St. Patrick’s day themed party. However, we’re renaming this party in honor of our favorite gal pals! Get ready to drink ALL the Diet Coke at our St. Patricia’s Day Party!!
Don’t you think these adorable Diet Coke cans make the perfect rainbow?!
Ok, which new flavor is your fav?? It’s a toss up between Twisted Mango and Feisty Cherry for me.
We also stocked our table full of food inspired by the Diet Coke flavors.
Here’s is our mango salsa inspired by Twisted Mango and Ginger Lime.
These beauties are Diet Coke chocolate cupcakes with cherry frosting taking cues from Diet Coke the original and Feisty Cherry. So yummy!
These rainbow rice krispies were formed in a mini bundt pan and cut in half to form the rainbows. Then a large marshmallow cut in half creates the cloud bottom. Making these with Fruity Pebbles was a delicious and fun twist!
And yes, they do taste as good as they look.
A colorful fruit platter is a fun way to add a healthier option for guests. The orange juice fruit dip inspired by the Zesty Blood Orange is for those who feel fruit might be a little too healthy for them. 😉
A bowl full of limes and Torani’s Coconut syrup is a must to have on hand when drinking Diet Coke!
All the new flavors are SO delish but the original still has a special place in my heart.
What’s a better party favor for a Diet Coke party than a Diet Coke to go! An old Diet Coke slogan said exactly what we wanted to express to our friends on the favor tag.
I wasted nothing when it came to the party decor! I cut out the can from the boxes to make a rainbow garland for the table.
We also used parts of the box for the backdrop and to cut out letters letting our besties know how we feel when calling them our friends.
We even sprinkled the table with chocolate gold coins to add a bit of sparkle.
Our littlest bestie joined the party and gave the treats two thumbs up!
On a little side note, since we’re talking best friends, I absolutely love Lara and our friendship! Isn’t it great having the kind of friend who totally gets you and loves you anyway?! You know, the kind that you can send weird memes to at midnight and she texts your right back with an even funnier one. And even more importantly, you can share when life is dealing you a crappy hand and she’ll listen and cry with you. Yeah, I’m pretty dang lucky she’s my friend. If any of you have friends like that, make sure you treasure them because that kind of friendship is pretty special.

Except that Saint Patricia is an actual (Italian) saint, whose feast is on August 25th… Cute idea, but not at all accurate.
