Want to make a fun, tasty treat for St. Patrick’s day? I made this for my kids the other day and they LOVED it!! It’s like a Shamrock shake in popcorn form!

Did I mention that this recipe is also super easy?! Well, it is!

You absolutely can make your own homemade popcorn. These big bags of popcorn were on sale at Costco so I opted for this popcorn instead. I measured out 10 cups into a large bowl.

I then melted two bars of almond bark, 1 cup of white candy melts and 1/2 cup of mint chips in my double boiler. You could also melt in a glass bowl on medium heat in your microwave, a minute at a time, stirring in between until fully melted.

Once fully melted, add to your popcorn.

Stir mixture into popcorn until thoroughly covered.

I found this colorful packs of sprinkles at my local Michaels. I picked up a rainbows worth of sprinkles to add to my Shamrock popcorn.

Add some chocolate chips to the mix. Be sure to add your mix-ins while popcorn mixture is still sticky so they will adhere to the popcorn.

Once mixed, lay popcorn mix out on a cookie sheet to dry. Once dry, break apart and enjoy!! This would look so cute tied in clear bag with a rainbow ribbon to hand out to your lucky friends!
Here’s the recipe:
- 10 cups of popcorn
- 2 bars almond bark
- 1 cup white candy melts
- 1/2 cup mint chips
- rainbow sprinkles
- chocolate chips
