Okay, okay it’s pretty much apple sauce but don’t tell me that, I’m on a diet!
So the beginning of the year I started Weight Watchers, Well, not legit WW, I’m doing it with a group of friends using their program. Shhh. I have struggled with my weight since I had my third child. It’s not enough to really complain about but I’m just not happy. I have tried a bunch of diets, all resulting in my weight bouncing around….I don’t need any more bouncing.
Weight Watchers has been just what I needed. I think it’s the perfect balance for me to stay on the right path because, lets face it, I’m never going to eat totally healthy all the time….it’s just not me! And if you are wondering, I have lost almost 15lbs already. Holla!
I don’t know about you but I NEED sweets. You take that away and you don’t want to be around me! Ask my kids and my husband. This makes me feel like I’m getting away with something having this warm dish every night. So here’s the recipe that has saved my diet!
So you start out with a bunch of Granny Smith apple. I have 12 here.
Oh wait! Where the heck have I been that I haven’t seen or heard of this?!? I feel like I’m an idiot for not knowing but I don’t bake…like ever. Does that make up for it? Probably not. If you are like me, it’s an apple peeler, slicer, and corer. For reals?!? Thankfully Meghan let me borrow hers.
It totally made the job super easy. I had a blast using this! Totally not joking!
Whaaaat?! Peeled, cored, sliced apples in no time. I could do an infomercial!
After that hilariousness, I gave them a little chop in half and took off the skin that was left. I threw them in a pot with about a 1/2 cup of water. I started with a 1/4 cup but then added more. I was trying not to fry the apples, just cook them down.
I added 1 1/2 tablespoons of cinnamon.
I had this brown sugar and it’s 0 points per serving (1 tsp), so heck yeah I’m using it! I added a 1/4 cup to my whole batch. 1 tsp. per serving, 12 servings total.
Then you cook and smash and smash and cook until it’s the consistency you want.
I like a semi-chunky-semi-saucy consistency. Just my preference.
Get some fat free whip (2 tablespoons)
Put it on that bad boy (1/2 cup per serving)
Now I wish it looked better in pictures, I tried. But seriously after you put the kids to bed, or dog, or husband or whatever, curl up on the couch and enjoy knowing you aren’t totally jacking up your diet.
At least that’s what I’m doing!
Makes 12 servings
12 Granny Smith apples
1 Tablespoon cinnamon
1/4 cup raw brown sugar
Peel, core, slice apples.
Lightly chop.
Put in pan along with 1/4 to 1/2 cup water.
Add cinnamon and sugar.
Smash and cook down until desired consistency.
Serve warm.
Top with whipped topping.

Yum! I've been trying to lose the last of my baby weight, so I haven't had too many desserts lately. This one looks good in more ways than one.
I am currently doing the same. Why does it have to be so hard?! Hopefully this helps! I need something sweet every night.
